- 1 onion chopped
- 1 red bell pepper chopped
- 2 cloves garlic minced
- 1 tsp chili powder
- salt and pepper to taste
- 1 can diced tomatoes with chilies
- 2 cups diced pumpkin
- 3/4 cup pureed pumpkin
- 2 cups corn
- 2 cups smoked brisket chopped
- 2 cups white beans cooked
In a large pot, saute the onion, pepper, garlic, chili powder, salt and pepper until soft.
Add remaining ingredients and simmer at least half an hour, until all ingredients are soft and flavors meld. May need to add up to 32 ounces of water to desired thickness.
