Baked Oatmeal

It seems like everyone has a favorite recipe for baked oatmeal . . . except me. I’ve never made it. When others are exchanging their favorite recipes (usually in anticipation of serving a crowd, or to make a big batch to refrigerate and eat over the coming week), I just smile and nod. Until today!

This recipe is from Simply in Season.

2 cups rolled oats
1/3 cup brown sugar
1 tsp baking powder
1/3 cup raisins
3 Tbs walnuts, chopped
1 cup milk
1/2 cup applesauce
2 Tbs oil
1 Egg beaten

1. Combine dry ingredients.

2. Combine wet ingredients in a separate bowl. Can refrigerate overnight at this point.

3. Combine wet and dry together and bake in a greased 8×8 inch baking pan in a preheated oven at 350F for 25 minutes. Serve warm with milk.

Servings: 4

The verdict: This is a great hearty breakfast. I made mine in a 9×9 pan so I think I could have eaten 1/6 of the recipe and still been fine, saving some calories for later in the day πŸ˜‰ I’m glad it refrigerates well. It was also a snap to throw together and I ran on the treadmill while it baked, took it out to cool, and jumped back on. So I was able to get a workout in and still have time to make breakfast!

    Thanks for this recipe! I’ve been looking for breakfast ideas for weekdays–something I can pack up quickly and take to work–and this fits the bill perfectly!

    I make a similar baked oatmeal with soaked oats http://nourishyourchildren.com/blog/2010/01/soaked-oat-breakfast-2-for-1/ All you would need to do for yours is to add a soured product when you refrigerate. Two tablespoons of yogurt, buttermilk, or whey will breakdown the phytic acid and unlock nutrients. For oatmeal you could soak longer, like 24 hours.

    I don’t know if I really have a favorite recipe, but I definitely love baked oatmeal. ONe thing I love about it is its versatility. Lots of different flavor profiles to be created!

    How did you serve yours? With milk? Sugar? Yogurt?

    Sounds yummy. I eat those Quaker Oats breakfast cookies…this would be a much better alternative!
