Black Thai Burgers with Gingered Shiitakes

You might have noticed that I’ve been handing over the kitchen reins to DH lately. I’m starting to miss cooking! But, DH is preparing for a burger cook-off, so I’m taking one for the team. Here is one of his test burgers. I made some acorn squash to go with it.

For the Burgers

1 1/2 lbs ground chuck
2 Tbs cilantro (finely chopped)
2 Tbs mint (finely chopped)
1 Tbs lime juice
2 tsp fish sauce
2 tsp jalapeno pepper (minced, with seeds)
2 tsp garlic (minced)
1 tsp lime zest (grated)
1 tsp ginger (fresh, grated)
1/2 tsp pepper (freshly ground)

For the Mushrooms

3 Tbs butter
2 Tbs peanut oil
2 tsp ginger (fresh, grated)
8 ounces shiitake mushrooms (sliced)
1/4 tsp salt
1/4 tsp pepper

4 Hamburger buns

1. Mix together ingredients for the burgers in a large bowl.

2. In a medium saute’ pan, melt butter, add oil, ginger, and then the mushrooms and seasonings and saute’ until tender, about 5 minutes. Set aside.

3. Grill the burgers to desired doneness.

4. Serve burgers on the buns, topped with the mushrooms.

Servings: 4

The Verdict: The burger was very flavorful, and I am a huge  mushroom fiend so I loved those, but there was something missing. We served them on pesto focaccia buns. I kept thinking that maybe a peach chutney or something sweet was needed, but DH disagreed. Not sure we have a contender for the burger cook-off, but it wasn’t bad.

    That burger sounds so great! I love all those flavors. Hmmm…maybe a spicy peanut sauce instead of the pesto would bring it all together. I’d be all for the chutney as well.

    Will be trying this this weekend – Alpha Hubby loves all the ingredients so it is already a keeper! How do you fix your acorn squash?
