DH was skeptical when I told him the name of the recipe, but I had faith in the editors of The Simple Art of Eating Well.

When I started writing this challenge as a way to force myself to think through the principles presented in the book Living More with Less, I wondered if I would get bored. 16 weeks, that’s 4 months! I can say that I haven’t gotten bored, and I have found it meaningful as a personal exercise.

Believe it or not, I used to subscribe to Eating Well magazine back before I cooked regularly. The exotic ingredients and dishes were fun to read about, but seemed way beyond my capabilities (besides, half the time I had no idea what they were talking about!) So it was kind of funny when I re-subscribed years later, only to discover that what once seemed exotic was now fresh and something I would actually cook. Funny how that happens. But I digress.

I am holding steady, no loss or gain to report. I’ve been slacking off on counting calories and not exercising. Seems to be a common theme among weight loss bloggers–I saw a sign the other day that said “Februdreary.”
