Buckwheat Banana Pancakes with Strawberry Jam

On holiday weekends I actually have time to make a breakfast other than scrambled eggs. Pancakes are a team effort around our house, because I always burn them. Strawberry Freezer Jam

Two flats of gorgeous strawberries (minus the couple of quarts we ate). I searched through all my cookbooks and canning books. Balsamic strawberry jam? Rhubarb strawberry jam?
