I LOVE Indian food, but it often takes forever. Which is why I was excited to find this recipe on the side of a Penzey spice bottle.

I LOVE Indian food, but it often takes forever. Which is why I was excited to find this recipe on the side of a Penzey spice bottle. I had forgotten about it until I scored a free 1 lb bag of grassfed lamb stew meat at a recent farm to restaurant event last week.

Rogan Josh

  • 1 lb lamb stew meat (I’ve also made with beef and venison in the past)
  • 2 Tbsp ghee or oil
  • 1 onion, chopped
  • 1-2 Tbsp Penzeys Rogan Josh Spice Mix (even though we love spicy food, I usually put the lower amount in)
  • 1 tsp salt
  • 1/2 C water
  • 1/4 C yogurt (I substituted sour cream and it worked just fine)

Directions:

  1. Heat oil or ghee and brown the lamb; remove the meat and set aside.
  2. Add the onion and saute’ until softened and browned; add the spice mix and salt and let cook briefly.
  3. Add the meat back in and slowly add the water and yogurt. Let simmer 1-2 hours, covered.
  4. Increase heat and uncover in order to thicken the sauce; serve over rice.

The Verdict: As I mentioned, this is a super easy peasy recipe and we love it every time. If you don’t want to buy a spice blend, you can make your own. I found some curry paste recipes from Jamie Oliver, and rogan josh is in the list. Otherwise, experiment – Penzeys lists the ingredients as: paprika, garlic, ginger, cumin, coriander, black pepper, cayenne pepper, Korintje cassia cinnamon, cardamom, cloves and saffron.
