Pumpkin-Chai Egg Puffs

  • 6 eggs large
  • 3/4 cup pureed pumpkin
  • 3 tbsp brown sugar
  • 1 1/2 tbsp cornstarch
  • 3/4 tsp baking powder
  • 2 tbsp powdered sugar
  • 1 tbsp Chai Spice Mix

Chai Spice Mix

  • 4 tbsp ground cinnamon
  • 2 tbsp ground cardamom
  • 1 tbsp ground ginger
  • 1 tbsp ground nutmeg
  • 3/4 tsp ground cloves
  • 1/4 tsp white pepper


  1. Mix Chai Spice Mix (or use your favorite pre-mixed Chai mix)

  2. Grease six four ounce ramekins. Preheat oven to 400F.

  3. In a large bowl, combine the eggs, brown sugar, cornstarch, baking powder and Chai Spice Mix. Use a whisk to thoroughly combine the ingredients.

  4. Divide the mixture between the ramekins.

  5. Place the ramekins on a large baking sheet and bake for about 15 minutes, or until the eggs are puffed up, their tops are golden and a toothpick inserted in the centers comes out clean.

  6. Use a flour sifter to sprinkle powdered sugar over the egg puffs.

  7. Serve warm or cool.
