Quinoa Banana Bread

Ingredients

  • 1 cup quinoa flour
  • 1/3 cup ground flax seeds
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon sea salt
  • 2 large eggs
  • 3/4 cup sugar
  • 1 1/3 mashed very ripe bananas
  • 1/3 cup melted coconut oil
  • 2 teaspoons vanilla extract
  • 1 cup quinoa, cooked

Instructions

  1. Preheat oven to 350F.
  2. Grease a 9x5 loaf pan.
  3. In a large bowl, whisk together quinoa flour, flax seeds, baking soda, cinnamon, and salt.
  4. In a medium bowl, whisk eggs until blended. Stir in sugar, bananas, coconut oil and vanilla until well blended.
  5. Add the egg mixture to the flour mixture and stir until just blended. Gently fold in quinoa.
  6. Spread batter evenly in prepared pan.
  7. Bake in preheated oven for 55 to 60 minutes or until top is golden brown and a tester inserted in the center comes out clean. Let cool in pan on a wire rack for 10 minutes, then transfer to the rack to cool completely.
