Before last year, there was only one kind of squash worth eating: The acorn squash. Preferably poked with a fork, microwaved, cut in half, and sprinkled with butter and brown sugar. But the Simply in Season project forced me to try butternut, pumpkin, and other squash in ways I never anticipated. I now have much respect for the butternut squash. Here are some of the favorite recipes I've discovered:

    I adore squash. I eat it from early summer all the way through fall. Butternut squash Soup is one of my favorites. The household favorite is Spaghetti Squash. We split it in half andcook it in the oven until tender. Use a fork to string it out of the rinds. Drizzle with olive oil, butter, salt, pepper, garlic, parsley. Toss gently and top it with a few diced tomatoes and some parm cheese. SO YUMMY! So simple. I am going to try a few of your recipes too.

    Thank you, thank you, thank you! I have a ton of pumpkins on my back porch to use and very few recipes to use them in. The pumpkin sausage pasta looks particularly interesting, but so do the others.

    I have three favorites – pumpkin gingerbread, butternut squash soup, and pumpkin pancakes.

Seriously, isn’t it amazing how a year and an open mind can change your entire recipe file when it comes to introducing new foods?     I LOVE LOVE LOVE winter squash! I don’t have a favorite. I can’t choose. But I love acorn or butternut roasted, drizzled with maple syrup. I love pumpkin soup (I have a Thai Curry Pumpkin Soup on my blog), I love cubed butternut in risotto. I love it pan-roasted and put on salads. I love serving it like mashed potatoes. I love baking. (I feel like this is sounding like a Dr. Seuss book!) Squash rocks!

    I am learning to appreciate all sorts of veggies that were never on my radar before – the different squashed are definitely on the list. I am very intrigued by the pumpkin sausage pasta – I think my family will love this. Thanks for sharing this with us at the Hearth and Soul Hop!
