Black Bean Dip

Despite what the photo above may lead you to believe, this black bean dip is super yummy. It’s just kind of hard to photograph some things, ya know? I tried taking a picture of it in a tortilla, as that’s how I ate it for lunch, but that pic didn’t turn out much better:

Don’t say it, I know what you’re thinking. And I probably can’t print it here. But let me tell you, this dip is really flavorful and versatile. I’m noticing a theme in some of these bean/hummus things. Add some beans, olive oil, some herbs, some spices, mush it all together, and voila! A great sandwich spread / veggie dip / crudite’.  Someday I might even make  up a recipe myself, with things I have on hand. Wouldn’t THAT be the day?

Recipe source: adapted from Simply in Season

1.5 cups black beans (1 can)
2/3 cup parsley (I only used a few tablespoons because I was using parsley I had vacuum sealed and frozen last summer, and I wasn’t sure how that was going to turn out. The taste was fine, but it wasn’t nice and “fluffy” like fresh parsley.)
1/3 cup walnuts, chopped
2 tsp lemon juice
1 tsp olive oil
1 tsp ground cumin
1 pinch garlic salt
1/2 tsp ground coriander
1 pinch cayenne pepper to taste
1 pinch salt  to taste

1. Mash it all up in a bowl.

The verdict: Surprisingly, I loved the walnuts in this. It went together super quick, and was a great lunch. If DH had been home he would have added chicken, but I’m starting to love beans as a protein source. So inexpensive and low-cal!

Yield: 2 cups

    I love this idea of black bean dip in a tortilla! My family LOVES black beans. I have got to try out your recipe soon…and love that it’s low in fat and calories. It’s swimsuit season, after all! 🙂
