Okra is one of those vegetables I never cooked before working my way through Simply in Season. But I've come to enjoy it. This is a super simple recipe that's a great side dish.

Okra is one of those vegetables I never cooked before working my way through Simply in Season. But I’ve come to enjoy it. This is a super simple recipe that’s a great side dish.

Ingredients:

1/2 C cornmeal

1 tsp salt

1/4 C Parmesan cheese, grated

1/4 tsp chili powder

3 C okra (sliced)

2/3 C milk

Directions:

  1. Combine cornmeal, salt, cheese, and chili powder in a bowl.
  2. Dip the okra in milk and then roll in the cornmeal mixture.
  3. Fry in a little bit of oil until golden brown.
The Verdict: I really liked the cornmeal coating, and the okra still tasted fresh even after the frying. Overall it’s a very satisfying side dish.
