When I saw this recipe in Simply in Season, it reminded me of a favorite stir fry recipe that I used to make when I was first learning how to cook, 10 years ago. So I adapted it to what I remembered.

When I saw this recipe in Simply in Season, it reminded me of a favorite stir fry recipe that I used to make when I was first learning how to cook, 10 years ago. So I adapted it to what I remembered.

Ingredients:

  • 4 C summer squash or zucchini, sliced
  • 1 onion, sliced
  • 1 hot pepper, sliced
  • soy sauce and brown sugar to taste

Directions:

  • Slice all ingredients and saute’ in pan
  • Add soy sauce and brown sugar
  • Cook until zucchini is tender

The Verdict: I LOVE the brown sugar in this, although it isn’t called for in the Simply in Season version. It’s probably not real healthy either, but is sure tastes good!

    Hey…a little brown sugar never hurt anybody! I think it would go perfectly with the summer squash!
