I love it when a recipe tastes so good you can't believe it's healthy!

I love it when a recipe tastes so good you can’t believe it’s healthy! I was able to get a pre-release copy of Eating Well: Fast & Flavorful Meatless Meals, and decided to give this recipe a try.

Ingredients:

  • 2 Tbsp cider vinegar
  • 1 Tbsp olive oil
  • 2 tsp canned chipotle chile in adobo sauce (finely chopped)
  • 1/4 tsp salt
  • 2 C red cabbage (shredded)
  • 1 medium carrot (shredded)
  • 1/4 C fresh chopped cilantro
  • 15 oz can white beans (rinsed)
  • 1 ripe avocado
  • 1/2 C shredded cheddar cheese
  • 2 Tbsp minced red onion
  • 4 wraps

Directions:

1. Whisk together vinegar, oil, chile, and salt. Add cabbage, carrot, and cilantro; mix well and set aside.

2. Mash beans and avocado; stir in cheese and onion.

3. Serve on a tortilla using about 1/2 C of the bean mix and 2/3 C of the cabbage-carrot mixture.

Serves 4

The Verdict: I loved the bold, fresh flavors and saved some for lunch for next week.

    Mmmm….beans, cheese, cabbage, avocado….if lovin’ you is wrong, I don’t wanna be right. Thankfully…there is nothing wrong with lovin’ this!

    This looks great! We love wraps! It is hard to get good ones that are gluten free, but I have a few recipes, one that I have been meaning to try again.

    These wraps look fantastic and that flavour combination sounds delicious! I like how the beans and avocado are mashed together so that you don’t have escape artist beans.

    What a healthy and delicious meal! The chipotle must add a really nice smokiness and kick that contrasts well with the creaminess of the avocado and the mildness of the beans!

    I’m guessing it will be a challenge to find ?2 tsp canned chipotle chile in adobo sauce (finely chopped) in my small town. Any suggestions for a substitute? This sounds so yummy!

      actually it might not be difficult. Try the “Mexican” section (by the tortilla shells, salsa, etc.) near the canned jalapenos. I’ve found it even in small grocery stores before. It’s usually in a tiny little can.
