I was able to kill two birds with one stone by making this herbed butter--I wanted to try it for sauces week, plus it's on my list of recipes I still need to finish from Simply in Season. This one is great on baked potatoes.

I was able to kill two birds with one stone by making this herbed butter–I wanted to try it for sauces week, plus it’s on my list of recipes I still need to finish from Simply in Season.

Ingredients:

  • 1/2 C butter (softened)
  • 1 shallot (minced)
  • 1 clove garlic (minced)
  • 2 Tbsp fresh chopped parsley
  • 1 tsp lemon juice

Mix well.

The Verdict: I served this over a baked potato and wow, both DH and I LOVED the combination of the fresh parsley, sweet butter, and shallot for contrast. Simply in Season offers lots of other variations, such as lemon and maple. You can also experiment with other herbs. Delicious!
