Sugared Asparagus

This is a recipe from Simply in Season , and I was skeptical at first. Sugar in asparagus?

2 Tbs butter
2 Tbs brown sugar
2 lbs asparagus (cut in 1 inch lengths)
1/2 cup chicken broth

1. Melt together butter and brown sugar in large frypan over medium high heat until dissolved.

2. Add asparagus and saute’ 2 minutes.

3. Stir in broth, bring to a boil, cover, and simmer until just tender, 6-8  minutes. Remove asparagus to a warm dish. Return liquid to a boil and simmer uncovered until sauce is reduced by half, about 5 minutes. Pour over asparagus. If desired, garnish with toasted sesame seeds.

Servings: 4

The verdict: I made this for my parents to go along with the lamb. They rated this an A+. Surprisingly, it wasn’t overly sweet. Just enough to make it interesting.

    Come to think of it, asparus has a little hint of bitterness to it, so I guess the sugar balances it all. As soon as asparagus becomes a little cheaper, I will try this recipe, too. 🙂
