Summer CSA Frittata

You are here: Home / Food / Recipes / Summer CSA Frittata
August 10, 2016 by Wendy Hammond

frittatacsaThis time of year, no matter how hard I try, I always have some random vegetables left. Here’s a list of what I received in my Groundswell Community Farm CSA share last week:

Basil
Radishes or Herb bunch (chives, sage, mint, thyme)
Bok Choy OR Cabbage OR Kohlrabi
Kale OR Chard
Garlic
Beets
Carrots
Summer Squash
Cucumbers
1 Pepper OR 3 Hot Peppers
Onion
Tomatoes
Beans

One of my favorite ways to use up random CSA vegetables is to make frittatas. They go together so fast and you can use pretty much whatever you have on hand!

This time around I used a bell pepper, a few beet greens, a small summer squash, leeks instead of onion, and a teaspoon of smoked mozzarella and tomato seasoning from Wildtree. Delicious!
